The EXECUTIVE STEWARD is responsible to supervise the overall organization and operation of the Stewarding Department, including overseeing the cleanliness, safety, and the proper equipment set-up and food transportation for all Banquet functions.
The expected base wage range for this position is: $29 to $55.55 per hour. This position may be eligible for additional compensation according to the Company's policies, as they may be amended from time to time.
ESSENTIAL DUTIES, include but not limited to:
- To monitor, supervise and distribute work assignments to Stewarding employees and contract (third party) labor.
- To interview, hire, train, schedule, support, review, discipline employees in the Stewarding Department and to ensure all staff members maintain the highest possible levels of employee morale and departmental productivity.
- To create schedules for Stewarding staff on a weekly basis.
- To monitor labor costs and overtime to ensure payroll costs stay within budgetary guidelines.
- To coordinate the transportation of items to the function areas.
- To develop and maintain an organizational system of Food & Beverage equipment.
- To manage the storage/organization of all equipment used for Food &Beverage functions (china, glassware, silverware and carts).
- To create and revise, as needed, written SOP’s and checklists to help ensure that the Food & Beverage operation is compliant with the Health Code, including performing monthly internal Health Code inspection of each kitchen and outlets and to report findings and make recommendation to Food & Beverage Director.
- To keep a record of any maintenance need of kitchen equipment and to communicate and follow up with the Engineering department until such need is fulfilled.
- To oversee the transportation of dirty equipment to dish room area.
- To oversee and support all functions pertaining to the Stewarding Department.
- To assist the Banquet Chef in presenting all foods for plated meals and buffets, including setting up chaffing dishes and plating food.
- To review Banquet Event Orders daily in order to establish work detail and equipment lists for Banquet and Kitchen staff.
- To inventory all Food & Beverage equipment (i.e., china, glassware, silverware and serving utensils) on a monthly basis.
- To monitor outlets continually for cleanliness and par levels of equipment and supplies.
- To requisition china, glass and silver as needed.
- To monitor all sanitation codes and regulations regarding activities including, but not limited to cleanliness and pest control.
JOB KNOWLEDGE & EDUCATIONAL LEVEL: Minimum 3 years of experience in back-of-house in first class hotel or food service establishment. Able to communicate effectively. A valid and current Food Handler’s Card is required. Valid California driver's license required. Proof of personal automobile insurance coverage required.
SKILLS AND APTITUDES: Detail oriented. Organized and efficient. Learns quickly. Safety-minded. High quality standards for production and service. Courteous and friendly manner. Good team player. Customer service focus. Able to work productively with little supervision. Trustworthy and reliable.
PHYSICAL DEMANDS: Stands and walks short distances throughout shift. Constantly required to handle and move objects weighing up to 40 lbs. over moderate distance. Frequently required to handle and move objects weighing up to 200 lbs. over moderate distances, using appropriate hand trucks and carts. Bends, stoops, reaches, pushes, and lifts to perform routine tasks. Flexibility and good reflexes required to operate electric carts. Must be able to work under pressure. Frequent use of stairs, daily.
